One-Pot Wonder Veggie Pasta

We could probably all use a few more veggies in our diet. This Meatless Monday, try a quick, delicious veggie pasta that comes together in a matter of minutes! Budget-friendly and light on the cleanup (seriously, one pot is all you need!), this tasty veggie pasta will have you feeling good about your choices. If you’re new to cooking, this crazy-easy recipe is a perfect way to dip your toe in the water! Try the recipe below, or get creative and throw in your favorite veggies. Having fun with your healthy choices can make them a lot easier!

The Recipe

Time

Prep: 10 minutes
Cook time: 15 minutes
Total: 25 minutes

Ingredients

  • 1 large yellow onion
  • 2 large sprigs of fresh basil
  • 10 oz container of cherry or grape tomatoes
  • 3-5 garlic cloves (per your preference)
  • 8 oz container white mushrooms
  • 16 oz package of linguine (or pasta of your choice)
  • 32 oz vegetable or chicken broth
  • Splash of olive oil
  • Salt & pepper
  • Oregano
  • Optional: parmesan cheese

Quick How-To

  1. Chop up the onions, tomatoes, mushrooms, basil and garlic (you can also use a garlic press if you have one!) and throw them in the pot.
  2. Break your linguine in half and toss that in your pot too.
  3. Pour in your broth. The liquid should be pretty close to covering your ingredients, but the fresh veggies will also create more liquid so don’t worry if they aren’t completely submerged.
  4. Drizzle in some olive oil.
  5. Season to your liking with salt, pepper, and oregano.
  6. Cover the pot and set the heat to HIGH until your pot is at a full boil.
  7. When you’ve reached a boil, uncover and stir and turn the heat down to MEDIUM.
  8. Leave uncovered and let your pot continue to boil for about 15 minutes, but DON’T FORGET to stir every 3-4 minutes so your noodles don’t stick to the bottom.
  9. When the liquid has absorbed / evaporated, it’s dinner time! Sprinkle with cheese if that’s your thing and enjoy!
